Easy No Bake Cheesecake (Great for teaching kids!)

1 Graham cracker pie crust (9 inches)
1 Package Cream Cheese, pre-softened (leave in warm water for 5 minutes; 8oz)
1/3 cup lemon juice
1 can sweetened condensed milk (14 oz)
1 teaspoon vanilla extract
1 can whatever-fruit-you-prefer pie filling

Place softened cream cheese in large bowl. Add condensed milk, lemon juice, & vanilla. Beat until well blended. Add to pie crust and chill (NOT FREEZE) for 5 hours. Add fruit topping & serve.

Hampton Roads Mexican White Sauce for Tortilla Chips

Hampton Roads Mexican White Sauce

Ingredients:

1 1/2 tsp. oregano
1 1/2 tsp. garlic powder
3/4 tsp. cumin
1 tsp. crushed red pepper
1/2 cup of milk
2 cups of Miracle Whip

Steps

1. Mix spices in a bowl
2. Add milk
3. Whip in Miracle Whip
4. Mix well. Cover. Fridge for at least 2 days before serving. Keep chilled until use.


Served in all the Mexican restaurants in the Hampton Roads region of southeastern Virginia, and almost unheard of everywhere else. I don't know why. It's delicious! I like it much better than salsa or queso.

Melt in Your Mouth Chicken

Ingredients:

4 boneless, skinless chicken breasts
1/2 cup Parmesan cheese
1 cup mayonnaise (I use Duke's)
1 tsp. garlic powder
1 1/2 tsp. seasoning salt
1/2 tsp. pepper

Steps:

1. Spread mixture over chicken breasts
2. Bake at 375 for 45 minutes
